3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed container housing several portioned cups of salsa in low boy cooler #1 above 41F. Through conversation with PIC salsa was prepared roughly around 6:30AM-7:00AM and voluntarily discarded container of portioned cups of salsa. EHS verified portioned cups of salsa at breakfast Kiosk were below 41F.
