5-205.11 (B) A handwashing sink may not be used for purposes other than handwashing Pf. Observed the handsink had ice in it. CDI - explained to the food handler that the handsink is for handwashing only.

3-303.12(A) Packaged food may not be stored in direct contact with ice or water if the food is subject to the entry of water. Observed preportioned yum yum sauce sitting on untrained ice. CDI - PIC provided a solution were the ice/water will not enter the product.

3-501.19 (A) (1) Written procedures for Time as a Public Health Control shall be prepared in advance, maintained in the establishment, and made available for the Health Department upon request. Written TPHC procedures must specify methods of compliance with 3-501.19 (B) or (C). -Pf. Observed TPHC procedures on site not include any of the items facility holds on time.
